1 cup shelled hemp hearts
½ cup cauliflower, riced
3 tablespoons lemon juice
1/4 cup olive oil
1 cup chopped parsley
1/4 cup chopped mint
1/2 cup scallions
1 cup cherry tomatoes, cut in half or quarters
1/2 cup chopped cucumber
1 teaspoon coarse salt
1/4 teaspoon pepper
Combine all of the ingredients in a large bowl. Adjust seasoning to taste. Serve immediately or refrigerate for up to 4 days.
