Whether you are a seasoned cook or complete novice, creating a meal from what you've got on hand is always a challenge. Join Liz for this fun and tasty winter themed class. Liz will share her tips to help you create a winter pantry that will inspire you to be creative with what you've got to create soul warming recipes without leaving the house. Following her discussion, Liz will demonstrate 2 pantry recipes anyone can cook at home.

Winter Tomato Soup from the Pantry

Ingredients
Servings 4-6
2 Tbs olive oil
1 large onion, chopped
1 stalk celery, chopped
3 garlic cloves, chopped
1 tablespoon curry powder-Madras
1/8 tsp crushed red pepper
1 28-oz.can Italian plum tomatoes-drained, juices reserved. Cut each tomato in half lengthwise.
1 15 ounce can diced tomatoes
4-5 cups vegetable stock or chicken stock (homemade, or store-bought is fine. I use Better Than Bouillion Base)
2 Tbs sun-dried tomatoes-packed in oil, chopped (if using sun-dried tomatoes not packed in oil, pour 1/2 cup hot water over the tomatoes to soften. This can be done in class)
Kosher salt and freshly ground pepper to taste
Croutons:
2 slices of Artisan Bread, cut into ½ inch cubes
2 tablespoons extra-virgin olive oil
Equipment
the stove and oven will be used
one 1/2 sheet pan or baking pan lined with parchment paper or foil
8 quart soup pot or other heavy-bottomed pot
large saute pan, 10-12 inches
immersion blender, standing blender, or food processor. If you do not have any of these, you can leave the soup chunky and it will be delicious!

2 teaspoons Dijon mustard
1 tablespoon fig jam (any jam or chutney will work)
2 ounces mozzarella or cheddar, cut into slices
2 ounces shredded or grated parmesan cheese
1 garlic clove

What will be included with my Online Class registration?
Registration includes an access link to your live, online class with Liz. Your confirmation email will include a link to a list of supplies, ingredients, and equipment to have on hand if you would like to follow along and participate throughout the instruction. The class will be delivered via Zoom web conferencing software and feature a live demonstration with Liz. The class will not be recorded for later viewing.
Will I need anything from home to use in the class?
If you would like to participate, you will need the ingredients and/or equipment referenced in your confirmation email. In addition, you will need a reliable internet connection as well as a computer or device with which you can access your virtual class. We recommend you arrive to class 5-10 minutes early to ensure you are able to set up your device and connection.
Can I ask questions or interact with the class?
Yes, you will be able to ask Liz questions during class. To start, your microphone will be muted to allow for a steady work flow during class.
