Recipe #1 Chocolate Truffles
Ingredients:
Makes 30 truffles
½ cup heavy cream
1 ½ Tbs light corn syrup
8 ounces bittersweet chocolate, chopped
2 Tbs unsalted butter, softened
½ tsp vanilla extract
Equipment:
medium saucepan
medium bowl
whisk
baking sheet
1 sheet of parchment paper
truffle scoop, small cookie scoop, or spoon
Before class:

Recipe#2 Harve' This! Magic Chocolate Mousse
Serves 4
INGREDIENTS
3/4 cup (6 ounces) water
8 ounces chocolate (70% bittersweet — choose a high-quality chocolate you love)
ice cubes
whipped cream for topping (optional)
EQUIPMENT
saucepan
whisk
2 mixing bowls -one should be able to sit in the other, touching an ice bath below.
4 ramekins or small bowls

How long is class? Allow for 1 1/2 hour class time
Will I need anything from home to use in the class?
If you would like to participate, you will need the ingredients and/or equipment above. In addition, you will need a reliable internet connection as well as a computer or device with which you can access your virtual class. We recommend you arrive to class 5-10 minutes early to ensure you are able to set up your device and connection.
Can I ask questions or interact with the class?
Yes, you will be able to ask Liz questions during class in the Chat.
