Cooking Lessons from a Colonial Kitchen-Recipes Then and Now

You are welcome to join Liz in the cooking fun. Plan to have your ingredients and equipment ready 10 minutes before class.
Recipe links will be shared in class.
This class will be recorded and links to the recording and the recipes will be emailed to you after class.

Recipe #1 Mint Vinaigrette


Ingredients:

1/4 cup rice vinegar-unseasoned 
2 tsp sugar
½ cup avocado oil or olive oil
​
¼ cup fresh mint
¼ cup fresh flat leafed parsley
1 tsp kosher salt
1/4 tsp pepper


Equipment for class:
​blender or immersion blender
rubber spatula or similar
*if you do not have a blender or immersion blender, plan to chop your herbs during class with a sharp chef's knife


Recipe #2  Roasted Potato Stacks

Ingredients:
​

Serves 4-makes 8 stacks
4 medium Yukon Gold potatoes- I purchase potatoes that are about the circumference of the muffin tins I am using. 
Olive oil spray or 1 tbs olive oil
½ teaspoon fresh thyme or ¼ teaspoon dried
1 teaspoon Kosher salt
½ teaspoon ground pepper
2 teaspoons olive oil

Equipment:
1 standard muffin tin
*If you do not have a muffin tin you can use a rimmed baking sheet with foil
*if you only have a muffin tin for large muffins, you can increase the number of potatoes or make fewer stacks

Recipe #3 Lamb Chops

Ingredients:
​
Serves 4

2 (8 rib) lamb racks-about 1 3/4 pounds each 
¾ cup avocado
1 teaspoon kosher salt
1/2 teaspoon ground pepper

Equipment:
oven 12 inch proof saute pan-stainless steel or cast iron
or
large sautee pan and a rimmed baking pan 
tongs

Before Class:
Unwrap, rinse, and dry your lamb racks

Recipe #4 Sweet Peas

Ingredients:
​
Serves 4

1 pound bag frozen sweet or petite peas
2 tablespoons butter or olive oil
Kosher salt and pepper to taste

Equipment:
medium sauce pan

How long is class? Allow for 2 hour class time

Will I need anything from home to use in the class?
If you would like to participate, you will need the ingredients and/or equipment above. In addition, you will need a reliable internet connection as well as a computer or device with which you can access your virtual class. We recommend you arrive to class 5-10 minutes early to ensure you are able to set up your device and connection. 

Can I ask questions or interact with the class?
Yes, you will be able to ask Liz questions during class. To start, your microphone will be muted to allow for a steady work flow during class.

  • Joining via computer: A registrant can simply click on the link provided in the confirmation email.
  • Joining via smartphone or tablet: A registrant may need to download the Zoom Cloud Meetings application. The application is free and does not require that they create an account.
