Recipe #1 Polenta-by Marcella Hazan-adapted for class by Liz Barbour
Ingredients for class:
1 cup polenta
4 cups hot water
1 teaspoon salt
4 Tbs butter
1/2 cup grated Parmesan cheese
kosher salt and ground pepper
Equipment for class:
8" square baking pan or other 2 quart baking pan
deep platter for serving

Recipe#2 Ratatouille by Julia Child-adapted by Anne Willan
Ingredients for class:
1 medium eggplant (about 1 pound)
3-4 small zucchini (about 1 1/2 pounds)
1 teaspoon salt
1/2 cup olive oil
3 red or green bell pepper (or both-about 1 pound)
1 medium onion (about 1/2 pound), sliced
4 garlic cloves, chopped
salt and pepper
2-3 plum tomatoes (about 1 1/2 pounds)
3 tablespoons chopped parsley (about 1/2 cup leaves loosley packed)
Equipment for class:
vegetable peeler
cutting board
sharp chef's knife
baking pan
paper towels
large skillet-oven proof if using to finish ratatouille in the oven
medium emameled cast-iron casserole, Dutch oven, or oven proof skillet
Before class:
Prep ingredients as indicated in the above ingredient list.
Prepare and chill the basil syrup as per the recipe above

Will I need anything from home to use in the class?
If you would like to participate, you will need the ingredients and/or equipment above. In addition, you will need a reliable internet connection as well as a computer or device with which you can access your virtual class. We recommend you arrive to class 5-10 minutes early to ensure you are able to set up your device and connection.
Can I ask questions or interact with the class?
Yes, you will be able to ask Liz questions during class. To start, your microphone will be muted to allow for a steady work flow during class.
