No-Bake Chocolate Peanut Butter Oatmeal Snacks

Makes 36 one ounce balls
 
½ cup plus 1 Tbs skim milk
3/4 cup sugar
3 tablespoons cocoa powder
2 teaspoon vanilla
1 cup crunchy peanut butter (no sugar/no salt)
1/2 cup wheat germ (heaping)
4 1/2 teaspoons ground flax seeds (optional)
3 cups quick oatmeal
¼ tsp salt

  1. Heat milk, sugar and cocoa powder over high heat until boiling, stirring constantly.

  2. Take off heat and stir in vanilla and peanut butter; stir until peanut butter has melted completely.

  3. Stir in wheat germ , oatmeal, and salt.

  4. You can form these delicious snacks into many forms.  I use a 1 ounce cookie scoop and scoop them onto a cookie sheet.  As an alternative you can the mixture into an 8X8 pan. Allow to cool and set, then cut into bite sized pieces.  Store in an airtight container for up to 5 days, refrigerate or freeze.
*This recipe is VERY flexible. If you don't have wheat germ or flax seed, just use more oatmeal. If your cookies come out crumbly, use less oatmeal next time.
