“I must mention that my culinary confidence has
improved significantly since your class.
I always have difficulty juggling after school
activities and healthy meals. After using your preparation philosophy that
allows most of the meal preparation to be done earlier in the day and then just
"finished off" 15 minutes before serving, my family enjoyed a relaxed
gourmet meal that was on the table, shortly after arriving home from a late
riding lesson.
My effortless menu last night included crumbed
haddock (egg and breadcrumbs only), diced potatoes and carrots baked with
garlic, onions and seasoned with kosher salt and ground pepper accompanied
by an Arugala (haven't used this before your class) salad featuring fresh
pears from Kimball's, gorgonzola and candied walnuts which I prepared
myself. It was a spectacular meal without any pressure. I can now see how I
could easily prepare this meal for 30 people using the same technique.
I love the idea of placing the precooked food on
foil lined cookie sheets. Clean- up is done earlier in the day so there are just
a few plates at the end of the meal. We are a family of 6 and this is
fantastic!”
